Dr. Saltman explains the crucial role played by the enzyme –a protein catalyst –in guiding such vital chemical reactions as transforming sugar into fats and synthesizing nucleic acids. These enzymes do more than simply tenderize meat or ferment wine; they activate the cells which keep living things alive. Experiments during the course of the program graphically illustrate the peculiar properties of these remarkable entities.
